The Central opened in 2014 with a simple goal: to create a place where great food, genuine hospitality, and community come together. Founded by Kiersten Mayes and her husband, Chef John Ernst, the restaurant reflects both their professional backgrounds and a shared passion for creating memorable experiences.
John is a graduate of the Culinary Institute of America and spent years working in hotels and resorts across the country before returning to New England. He became the Executive Chef at Wentworth By The Sea Country Club, where Kiersten — who began there part-time while attending UNH — worked her way through nearly every front-of-house role before becoming Director of Catering Sales. Their time there laid the foundation for what would become their own restaurant.
At The Central, the focus is on wood-fired cooking, seasonal ingredients, and a menu that blends comfort with creativity. Over the years, it has grown into a place where regulars feel at home and new guests are warmly welcomed — a true neighborhood restaurant that values connection as much as cuisine.
